Although serum HDL-cholesterol, apo A-I, and apo A-II levels had the significant negative correlations with the amount of carbohydrate ingested, the apo A-I had the highest correlation. When the intake of nutrients were expressed with the sufficiency rate(amount ingested/amount recommended), which were adjusted for differences in individual sex, age, bodily constitution and work load, HDL-cholesterol lost the significant correlation with carbohydrates while apo A-I and apo A-II still retained or inereased it. Excessive intake of carbohydrates has been known to accelerate the catabolism of HDL.
